What To Use To Power A 45" Mono

I am starting a build on a 42" Seaducer to run "T" class. It will run a Castle 2028, 200amp HV Castle ESC. I currently run that set up in a Backlash Hydro and have seen 74mph running 8s2p. I think on this set up I am going to try and run it 10s2p. Hope that helps a little.
 
I am running a 45" Mono HK-1 (originally fit with 26cc gas) now fit with a Castle 2028 780KV, Castle Creation ICE 200HV ESC, 10s2P batteries, with a CNC 6717 modified propeller , the weight with 2p would be close to a gas powered boat but it is very fast and stable.

Before that I've put together an AC Lazer 46" (also a gas hull) with a SSS 5694 800KV motor, ICE 200HV ESC, 10S1P battery, with also a 6717 modified propeller, it is also very fast but a bit slow in pick up because of flatter hull.

Both are 1/4" flex cable drive for the 6717 props.

Have tried to use Hobbywind/Seaking 130A HV and 180A ESCs but both got burnt out.
