what do I soldier the two bare wires to when using this sensor

To whatever you want to monitor the voltage of.
Electric boat you would want to do the main batteries so you connect to the ESC input leads.
Gas boat would be a waste of time with the LiFe packs. There though you would probably want to wire simply put a Futaba J connector on and plug into the receiver unused channel. I think there is a inline fuse also that goes inline in positive lead also.
