I am new to third channel needle adjusting.

Do you set the the needle and then put the servo arm in the middle of the 90 degree adjustment range (1/8 turn available either way), or

do you put the servo arm at the lean end so you can go 1//4 turn richer for the engine heating up, or

do you put the servo arm at the rich end so you can go 1//4 turn leaner for the air temperature heating up during the day as the racing heats progress?

I am obviously CONFUSED  .

center the needle and center the servo. you will want to start out rich, then lean out a little at a time till its right

Center the needle in the middle of it's range of travel with the transmitter. Then use the actual needle, not the radio, to adjust it until it runs like you want it to. From that point on you then use your transmitter to tweak as needed. B)
