I had a Bonnano rigger repaired last winter from a fight with a Cris craft boat and new sponsons had to be made. When i got it back the new wood wasnt sealed. Its been awhile so refresh my memory? Poly resin thinned with acetone brushed on smoothed with a razor blade sound correct? Any other ways of doing it?

I'd use an epoxy formulated for coating. My preference would be West Systems 105 resin/207 catalyst but, again, removing the excess is a must to keep off unneeded weight

West systems 2 part epoxy based Everdure is great, ultra thin, applied with a brush, and sand down in between coats. 20 min induction time before application

I recently used the System3 Silver Tip product. Totally clear and tough as nails.. I didn't need to thin the material,.. it worked real well,.. highly recommend.. doesn't make the wood look dirty as some epoxies do..
