Picked up a 31 inch older seaducer with a k&b. What’s a good prop and strut height and angle to start with? Looks like this rudder is older style as it has one bolt and no sheer screw. Looks like a auto bailer was added at some point. Should I re epoxy the shaft? Not sure how it will hold up with some heat to it. And lastly any idea of a year range this was produced?

Mike, your boat actually looks like the 29" Seaducer, due to it's sub-surface drive. Some actually prefer this hull over the newer 31" which is surface drive.
With the limited power of the K&B & with it being sub-surface, I would start with an X437/3

Your correct 29 just looked. Does the strut height/angle seem to be in a ok spot?
 
surface drive with a kb, 437/3, i would check with jerry from seaducer if because its a sub surface if it runs a different prop, i never ran a mono with a sub surface prop
 
I raced the same hull with the same drive, and the same motor for a number of years and for the life of me , i cant remember what prop i used, but it was a good running package back in the day!
 
I had one years ago that ran pretty good, tucked the strut right up to the keel and ran X440/3 with a hopped up Nova Rossi.

X437/3 as Rick mentioned would be good.
