Are you racing? If so what class?
What sort of speeds are you looking for?

Motor mount
Brushless motor
Cooling jacket for motor + plumbing
Flex shaft collet that matches motor shaft size
ESC
Battery tray(s)
LiPo battery(s)
Battery connector(s) if not compatible with the ESC already
Water cooling for ESC
Possibly a need to patch up holes in the hull/hatch related to prior exhaust system.
New prop for the higher brushless FE RPMs

You might want to look at something like the ProBoat hydroplane as some RTR electronics specs.

I tend to put larger ESCs and motors in my RC vehicles than needed, but I like them to run reliable and cool.
Motor - 4074 (Leopard ) lower KV options will keep the boat less stressed and result in longer run times.
ESC - Off Shore Electrics Raider 150a (comes with 6mm motor bullets pre-installed for you to match the Leopard motors they sell)

Grim,
You would be correct if what I've read(and if my memory is accurate, something that does happen occasionally) is correct. Jerry was, supposedly anyway, approached by Pro Boat to have him help get the boat to work(somewhat anyway) before it was put into production.
