Can someone tell me if it matters what side of the strut the rudder goes on if the turn fin is on the right side and what the difference would be in performance?
 
I run 1/8 nitro we run clockwise and turn right, therefore I have mine mounted to the left of strut, that way if for any reason my rudder gets kicked up I can still turn right and hopefully finish my race and collect points. I cannot turn left hardly at all unless I slow way down and get the back of the boat in the water. The rudder works off the prop wash and makes it still somewhat manageable and drivable. If your running counterclockwise I would advise mounting on the other side for the exact same reason. Finishing heats awards points

In the days before high torgue servos it was easier for the servo to control the boat when mounted on the port side of the boat (longer lever). It also affect the balance side to side. Right side mount will help put pressure on the left side front sponson.
 
I have run both and feel no difference. The biggest benefit is the left mount is pull on the pushrod to turn. No bowing or bending of the pushrod is possible.
 
Samuel are you running clockwise or counter clock wise laps?
Clockwise. Only boat I own that doesn't have it on the left is my 1/8th Scale. The swim deck is in the way.

Which day are your shoes on backwards
If I could put it on the right I would.
